Pancakes are a favourite in our house, we usually only eat them for special occasions as sometimes they can be time consuming to make but not with Rose's quick and easy Banana pancake recipe. With this recipe, you'll be eating in no time.
Hi, I’m Rose. I’m a first-time Mum to a gorgeous little girl called Iris. I wanted to share my quick and easy banana pancake recipe with you. I also wanted to share our baby-led weaning experience with you. Maybe you’re just starting solids or maybe you’ve been weaning for a while, whichever stage you’re at, I hope you enjoy our story and pancakes! 😉
We took BLW extremely slowly. I let Iris pick the pace. I’m so glad I did. Our weaning journey started around 7-8months of age. We started with fruits and avocado and then quickly moved to lamb chops. My goal was to get Iris comfortable with the idea of food before worrying about whether she was eating it. A lot of the time we just had a play with textures. Over time we both became more confident with solids and introduced new foods daily. Iris suffers from extreme/chronic eczema – so we did struggle at the start with foods that were susceptible to flaring her condition. My tip would be to keep a journal in the first year and note what bothers your little one’s skin/stomach.
My top hack – is to meal prep if you find feeding time overwhelming or struggle with too few hours in the day.
Ingredients
- 1 Banana
- Half a cup of oats
- 1 egg
- 1/4 cup milk of choice
- 1 tbsp ground flaxseed
Method
- Blend all ingredients together in a blender until smooth.
- Heat your frypan
- Melt butter or spray olive oil into the hot pan
- Pour mixture into smal circles and brown on both sides
- Serve with fresh berries or fruit of choice
Reducing Food Waste
I also love using any fruit that’s left over from the week as icy poles for my child. It keeps food wastage down and she loves them (some times we even blend in some veggies).
